Chicken roast is a very tasty item of food beyond doubt. Almost every one likes it for its extreme tastefulness. Now to see, how this palatable food can be prepared at home in a very easy procedure with a few required ingredients.

  1. At first smear the Chicken pieces with a little turmeric & salt. Heat oil in wok and deep-fry the Chicken pieces in hot oil not for too long. Both sides of the chicken pieces are to fry each for 2 to 3 minutes because too much frying will make the chicken hard. Keep the chicken pieces in a plate duly fried.
  2. Setting a pan on flame pour 1 tbsp Oil and 1 tbsp Ghee in the heated pan and when oil & ghee become hot add Chopped Onion, Black pepper, Cardamom and Cinnamon. Fry time to time stirring until the Onion turns to golden brown color. Then add Ginger-garlic paste and stirring for a while give some water. Since the pasted masala in oil may have possibility of burning for this some water is to add. Thereafter, add nutmeg & mace paste, cumin seed paste, coriander powder and salt asper taste. Intermix all these ingredients properly through stirring for sometime. Adding food color give some water and stirring for a while to add Red chilli powder. In this way singe all these spices well and thereafter add water as needed. When water starts boiling give the Chicken pieces in it. Cook 8 to 10 minutes duly tightened the pan's lid. After 8 to 10 minutes capsize the Chicken pieces opening the lid with care so that those pieces do not break.
  3. Add yoghurt duly beaten with some sugar and mix well. Cook for further 8 to 10 minutes tightening the lid. Now add cashew nut & raisins, few green chilli and spread some onion Beresta on the Roast with 1 tsp rose water. Mix all these well through shaking for a while leading by the handle of the pan.
  4. Add Mawa with 1 tbsp ghee. Minimize the flame to almost lowest level. On adding Mawa the gravy becomes thick so high flame may cause burning at its bottom area. Keep on mild flame for sometime to get the Roast ready.
  5. Then the hot Chicken Roast becomes ready for serving conveniently.
